Chef David’s Recipe of the Month Quick Shrimp Scampi 1 1/2 lbs. of large Gulf shrimp – peeled and deveined (about 8 to 10 per person) 1/3 cup of butter (clarified if possible) 4 tablespoons of chopped garlic 6 green onions – thinly sliced (use green part only) ¼ cup Haak Blanc du Bois Dry wine Juice of one large or two small lemons 2 tablespoons of chopped flat leaf parsley Melt butter in a large skillet over medium/high heat. Add garlic and cook for about 1 to 2 minutes (but don’t let it burn). Add shrimp, onions, wine and lemon juice. Let cook for about 2 to 3 more minutes, turning shrimp so that they cook through. Add parsley to the skillet just before serving. Make sure that you scrape the bottom of the skillet and pour the remains over the shrimp before serving. The key to making this recipe a success is to use a skillet large enough (12” or larger) so not to crowd or overcook the shrimp. Enjoy with a glass of Haak Blanc du Bois Dry or Reserve Blanc du Bois wine.
