Going Underground: Celebrate with a Cellar Dinner
 Celebrate your special occasion nine feet underground -- in our quiet, cool and intimate wine cellar. Take Your Group on Tour
With falling temperatures just around the corner, isn't it time you scheduled a group tour? A great deal at $5 per person, your group can walk the Haak estate and winery and top it all off with a tasting of our award-winning wines. Add a chef-prepared lunch for only $15 a person and enjoy a refreshing meal amongst the vines as you sip the fruits of our labor. Tour and tastings generally take one hour. Words from the Winery
Thank You & Harvest Update

This year's Haak Harvest produced a Blanc du Bois grape record. At Haak alone, our two acres of vines yielded 3.92 tons, compared to 1.34 tons from 2009. From this abundant harvest, we will be labeling our Reserve Blanc du Bois as 'Estate' bottled for the first time in our history, using only the grapes grown from our own vineyard. 

With a staggering 50.19 tons of grapes from this year's harvest (which translates to 45,086 bottles of wine), we are introducing a Sweet Blanc du Bois in a sleek blue bottle. Look for it to be released by early October.

Chef Lee Takes Over

He completed his culinary degree at the prestigious Alain & Marie Culinary Institute in Houston. What's New
Ge-whats-tra-whaa?
Gewürztraminer: It may be hard to say, but it's definitely delicious to drink. The newest addition to our delicious wine varietals, Gewürztraminer brings a flamboyant aromatic profile combining lychee, honey, rose petals and passion fruit. While it makes up 20% of all wine from the Alsace region of France, 'gewürz' actually means spice in German. In the U.S., it's typically paired with Asian cuisine and smoked salmon. In its home region of Alsace, France, it is commonly served alongside Muenster cheese, flammekueche (a dish similar to a flatbread with crème fraiche, onions and pork fat) and pâté. Gewürztraminer is also grown in the region known as the Pfalz (Rheinland-Palatinate) in Germany.

Chef Lee's Recipe of the Month

Lemon Pudding with Blackberry Coulis

Ingredients
1 tsp. room temperature butter (unsalted)
1/2 cup all purpose flour
1 3/4 cup sugar
4 tablespoons butter melted
3/4 cup fresh squeezed lemon juice
1 tablespoon lemon zest
3 large eggs- separated
2 1/4 cup buttermilk

Blackberry Coulis
8 oz. fresh or frozen blackberries
1/2 cup dry white wine (Blanc du Bois Dry)
6 tablespoons sugar

Directions
Pudding: Preheat oven to 350 degrees. Combine the flour, 1 1/2 cups sugar and mix well.  Add the melted butter, lemon juice, lemon zest, and 3 egg yolks. Slowly stir in the buttermilk and set aside. Beat 3 egg whites with 3/4 Cup Sugar until stiff, and gently fold into the Flour mixture. Butter a standard loaf pan, and pour the mixture into it. Assemble a 'Hot Water Bath'-- take a large, shallow pan and fill with 1 inch of hot water. Place the loaf pan into the water. Bake for one hour. While the pudding is baking, make the Blackberry Coulis: Place the blackberries, dry white wine, and sugar into a blender or food processor and blend till smooth. Add mixture to a small sauce pan and slowly simmer. Top the pudding with warm blackberry coulis and fresh whipped cream.
