2011 Sweet Blanc du Bois
We are happy to present the newest member of the Blanc du Bois family. This sweet white wine is a tropical fruit explosion in a fun bright blue bottle. Sweet Blanc du Bois starts with pineapple and citrus aromas. The finish is a sweet, tangy blast of grapefruit and peach. If our Semi-Sweet Blanc du Bois isn’t sweet enough, then this is the perfect wine for you. Enjoy anytime, anywhere for a special treat that is sure to erase all the worries of a hectic day.
2012 Dry Blanc du Bois
This premium wine is made from the Blanc du Bois wine grape variety grown in the coastal regions of Texas. These grapes were hand harvested in the cool morning hours, whole cluster pressed, inoculated with cultured yeast, and fermented at 55°F to retain the fruit flavors that are characteristic of this variety. This wine is finished "DRY" and has a clean, crisp mouthfeel. It exhibits a fresh citrus finish of grapefruit and green apple, and pairs nicely with seafood, poultry, cheese and creamy pasta dishes.
2011 Blanc du Bois Reserve
Once again, history was made at Haak Vineyards and Winery! For the first time since our humble beginnings, we have yielded enough crop from our own vineyard in Santa Fe, Texas to release a wine that is 100% Haak Vineyard designation! If you were here during our hot July harvest in 2010, please come and taste the fruits of your labor. Not only are we excited by the fact that we could work with our own grapes to produce an amazing wine, we also made Haak history by testing a new technique that was previously known to keep Riesling bright and fruity while allowing it to go through a secondary fermentation. The results of our Blanc du Bois Estate Reserve are very exciting. The process for making this wine was barrel fermentation, completing a secondary fermentation that changes harsh malic acid into supple lactic acid, and then barrel aging on the yeast lees and stirring once a week. We started the secondary fermentation during the primary fermentation (called co-fermentation) which yielded fruity aromatics and a cleaner, lighter palate while highlighting the oak aging influences. The typical Blanc du Bois profile still dominates with overtones of citrus, ripe pear and pineapple. This wine pairs well with rich creamy sauces and soft cheeses.
2011 Semi-Sweet Blanc du Bois
Our signature award-winning semi-sweet white wine is shining in its 2010 vintage. Aromatics of grapefruit, citrus, papaya and peach intermingle with a perfectly balanced acidity level. A tiny amount of natural effervescence remains after fermentation, bringing out the bright, refreshing flavors of Blanc du Bois. Try this light-bodied semi-sweet with creamy pasta dishes and soft cheeses such as camembert and well-ripened soft cheeses such as Chaumes.
