Production Notes
2016 Sweet Blanc du Bois was made from grapes grown in five different vineyards in the state of Texas. The grapes were picked in the morning and allowed to cold soak overnight at a temperature of 35 degrees F. When the grapes arrived at the winery, they were whole cluster gently pressed and transferred into a stainless steel tank for cold settling. The solids are then removed by sedimentation and racking, then yeast is added for fermentation in stainless steel tanks at 50 degrees F.
