Ripe pear, grapefruit, green apples and tropical fruits elegantly highlight the wines complex aroma profile. The density and richness that comes from the lees aging and vanilla hints from the oak barrels is balanced by a perfect level of acidity.
The fruit was harvested mid-July 2017. We press the whole clusters very gently since our aim is to extract flavor without color or bitterness from the skins and seeds. This wine was aged on fine yeast lees (sur lie) for six months in American oak barrels and was stirred according to a specific plan (battonage). The yeast cells break down during this process and contribute further to the elegant structure.
We are very pleased with our Reserve Blanc du Bois - Chardonnay Style. The wine has been aged “sur lie” in new American oak barrels that are hand stirred weekly for 6 months to build texture. It displays sweet tropical fruit flavors with notes of pear, apples and butterscotch. The palate is medium bodied with notes of pineapple and mandarin. Oak flavors of vanilla and oak sit on the background.
